  • For Chicken Masala:
  • Oil – ½ cup
  • Onions (large) – 6, sliced
  • Tomatoes – 4, chopped
  • Ginger Garlic Paste – 3 tbsp
  • Green Chilies – 6
  • Green Cardamom – 1
  • Black Cardamom – 1
  • Cloves – 1
  • Cinnamon – 1 stick
  • Star Anise – 1
  • Bombay Biryani Masala – 60g (1 packet)
  • Salt – to taste
  • Red Chilli Powder – ½ tsp
  • Kashmiri Red Chilli Powder – 1 tsp
  • Coriander Powder – ½ tsp
  • Cumin Powder – 1 tsp
  • Curd – 1 cup
  • Small Potatoes – 4
  • Chicken – 1 kg
  • Water – ¾ cup
  • Lemon Juice – ½ lemon
  • Coriander Leaves – handful
  • For Rice:
  • Water – as required
  • Star Anise – 1
  • Green Cardamom – 3
  • Black Cardamom – 1
  • Cloves – 5
  • Cinnamon – 2 sticks
  • Cumin Seeds – ½ tsp
  • Black Peppercorns – 15–20
  • Shah Jeera – 1 tsp
  • Bay Leaves – 3
  • Salt – to taste
  • Oil – 2 tbsp
  • Lemon Juice – ½ lemon
  • Basmati Rice – 3 cups (soaked for 1 hour)
  • For Layering:
  • Cooked Chicken Masala
  • 80% cooked Basmati Rice
  • Red Food Color (optional)
  • Birista (fried onions)
  • Coriander Leaves
  • Mint Leaves
  • Ghee
  • For Onion Raita:
  • 1 Onion, sliced
  • 1 Cup Curd
  • Salt to taste
  • Juice of ½ Lemon
  • Black Pepper Powder
  • Red Chilli Powder
  • Coriander Leaves
  • For Masala Soda :
  • 5 tbsp Sugar
  • 1½ tsp Black Salt
  • 1 tsp Black Pepper Powder
  • 1½ tsp Chaat Masala
  • Juice of 2 Lemons
  • Mint Leaves
  • Ice Cubes
  • Chilled Soda

    BOMBAY CHICKEN BIRYANI RECIPE:

    Prepare the Chicken Masala:

    Heat oil in a large pot and fry the sliced onions until golden brown.

    Add green cardamom, black cardamom, cloves, cinnamon, star anise, ginger-garlic paste, and green chillies. Sauté for 1–2 minutes.

    Add chopped tomatoes and cook until soft and mushy.

    Add Bombay Biryani Masala, salt, red chilli powder, Kashmiri red chilli powder, coriander powder, and cumin powder. Mix well.

    Add curd and cook until the oil starts separating.

    Add potatoes and chicken. Mix well to coat the chicken with the masala.

    Pour in ¾ cup water, add lemon juice and coriander leaves.

    Cover and cook until the chicken is almost done. Switch off the flame and keep aside.

    Cook the Rice:

    Bring plenty of water to a boil in a large pot.

    Add star anise, green cardamom, black cardamom, cloves, cinnamon, cumin seeds, black peppercorns, shah jeera, bay leaves, salt, oil, and lemon juice.

    Add the soaked basmati rice and cook until 80% done.

    Layer the Biryani:

    Spread half of the prepared chicken masala in a heavy-bottomed pot.
