Frequently Asked Questions
Why do my modaks crack while shaping?
The dough is too dry or too cold. Knead the rice flour dough while it is still warm with greased hands, and keep it covered.
How long should I steam modaks?
Steam them for 10 to 12 minutes, until they turn slightly glossy. Grease the steamer plate so they don't stick.
