Cooking Steps
- 1Prepare the Batter:
- 2In a bowl, add 2 cups besan. Gradually add 1½ cups water and mix well to make a smooth, lump-free batter.
- 3Make the Bondi:
- 4Heat oil in a deep pan for frying. Transfer the prepared batter into a piping bag and cut a small opening at the bottom. Pipe the batter into the hot oil in small drops to make Bondi. Fry the Bondi on medium heat until cooked but still soft. Do not make it too crispy. Remove and drain the excess oil.
- 5Prepare the Sugar Syrup:
- 6In a pan, add 1½ cups sugar and 1 cup water. Boil until the sugar dissolves and the syrup comes to a boil. Add red food colour and ¼ teaspoon cardamom powder. Mix well.
- 7Combine the Bondi:
- 8Add the prepared boondi to the hot sugar syrup and mix well so that the boondi is evenly coated with the syrup.
- 9Add Ghee:
- 10Add 2 tablespoons ghee and mix well. Turn off the flame.
- 11Cover and Rest:
- 12Cover the pan with a lid and let the mixture rest for a few minutes, allowing the boondi to absorb the sugar syrup.
- 13Shape the Ladoo:
- 14When the mixture is warm enough to handle, take small portions and shape them into round ladoos by pressing firmly with your hands.
- 15Garnish:
- 16Place a cashew nut on top of each Ladoo.
