  • Paneer – 200 g (cubed)
  • Curd – ½ cup
  • Salt – to taste
  • Turmeric powder – ¼ tsp
  • Kashmiri red Chilli powder – 1 tsp
  • Coriander powder – ½ tsp
  • Cumin powder – ½ tsp
  • Garam masala – 1 tsp
  • Chaat masala – ½ tsp
  • Ginger powder – 1 tsp
  • Kasuri methi – 1 tbsp
  • Oil – 1½ tbsp
  • For the Paneer Filling:
  • Oil – 2–3 tbsp
  • Garlic – 1 tsp (chopped)
  • Green chilies – 2 (chopped)
  • Onion – 1 small (sliced)
  • Tomato – ½ (seeds removed, chopped)
  • Capsicum – 1 (sliced)
  • Fresh coriander leaves – 2 tbsp (chopped)
  • For the Paratha:
  • Maida (all-purpose flour) – 2 cups
  • Salt – to taste
  • Sugar – ½ tsp
  • Baking powder – 1 tsp
  • Milk – ½ cup
  • Water – as needed
  • Ghee – for layering
  • Maida – for dusting
  • Oil – for cooking
  • For Assembling:
  • Green chutney – as needed
  • Onion – 1 (thinly sliced into rounds)
  • Tomato ketchup – as needed
  • Chaat masala – for sprinkling
  • Butter paper – for wrapping

    In a bowl, combine curd, salt, turmeric powder, Kashmiri red chilli powder, coriander powder, cumin powder, garam masala, chaat masala, and ginger powder. Mix well.

    Add the paneer cubes and mix well. Add the kasuri methi and oil, then gently toss until the paneer is evenly coated with the marinade. Cover and marinate for 30 minutes.

    Heat oil in a pan. Add chopped garlic, chopped green chillies, and sliced onion. Sauté until the onion turns soft.

    Add the chopped tomato (without seeds) and sliced capsicum. Cook for 2–3 minutes.

    Add the marinated paneer and cook on medium heat until the masala thickens and coats the paneer well. Stir gently to avoid breaking the paneer cubes.

    In a bowl, combine the maida, salt, sugar, and baking powder. Add the milk and mix well. Gradually add a little water and knead into a soft, smooth dough. Cover the dough and let it rest for 30–40 minutes.

    Divide the dough into equal-sized balls. Roll each ball into a thin circle, apply ghee, dust with maida, fold into layers, and roll again into a paratha.

    Cook the parathas on a hot tawa with a little oil until golden brown and cooked on both sides. Repeat the same process for the remaining parathas.

    Place a paratha on a sheet of butter paper. Spread green chutney over it.

    Add the prepared paneer filling in the center. Top with sliced onions, tomato ketchup, and a sprinkle of chaat masala.
