  • For Marinating the Paneer:

  • 1 tsp garam masala
  • 1 tsp Kashmiri red chili powder

  • For the Rice:
  • 4 cups basmati rice
  • Water (for boiling)

  • For the Fried Rice:
  • 4–5 tbsp oil (for frying paneer)
  • 2 tbsp oil
  • 2 tbsp ginger, finely chopped
  • 1 tbsp garlic, finely chopped
  • 2 onions, sliced
  • 4 green chilies, chopped
  • 3 carrots, finely chopped
  • 1½ capsicums, chopped
  • 1 cup frozen green peas
  • 1 tsp white pepper powder
  • 1 tsp black pepper powder
  • Salt to taste
  • 2½ tbsp soy sauce
  • 2 tbsp vinegar
  • Optional Garnish:
  • Spring onions, chopped
  • Chili sauce or tomato ketchup (for serving)

    In a bowl, add 250 g paneer cubes. Add 1 tsp bota masala, 1 tsp garam masala, 1 tsp Kashmiri red chili powder, 1 tsp ginger powder, ½ tsp garlic powder, and salt to taste. Mix well and marinate the paneer for 10–15 minutes.

    Wash and soak 4 cups basmati rice for 20–30 minutes.

    Bring a large pot of water to a boil. Add salt and 2–3 tbsp oil, then add the soaked rice. Cook until the rice is 80% done, then drain and set aside.

    Heat 4–5 tbsp oil in a pan. Fry the marinated paneer until golden on all sides. Remove and keep aside.

    In the same pan, add 2 tbsp oil. Sauté 2 tbsp chopped ginger, and 1 tbsp chopped garlic until fragrant.

    Add 2 sliced onions and 4 chopped green chilies. Sauté until the onions turn soft.

    Add 3 chopped carrots and 1½ chopped capsicums. Stir-fry for 3–4 minutes.

    Add the cooked rice, 1 tsp white pepper powder, 1 tsp black pepper powder, salt to taste, 2½ tbsp soy sauce, and 2 tbsp vinegar. Toss gently until everything is well combined.

    Add 1 cup frozen green peas and the fried paneer. Mix gently and cook for another 2–3 minutes.
