Ingredients

  • For the Oyster Masala:
  • Oil – 6–7 tbsp
  • Onion, sliced – 4 medium
  • Green chilies, chopped – 4
  • Tomato, chopped – ½
  • Ginger-garlic paste – 1 tbsp
  • Turmeric powder – ¼ tsp
  • Salt – to taste
  • Garam masala – 1 tsp
  • Oysters – ½ kg
  • Oyster water/liquor – 1 to 1½ cups, strained
  • Coriander leaves – as needed
  • For the Rice:
  • Parboiled rice – 3½ cups, soaked for 7–8 hours
  • Small onions – 2
  • Green chilies – 4
  • Cloves – 1
  • Cardamom – 2
  • Cinnamon – 1 small stick
  • Ginger-garlic paste – 1 tsp
  • Fennel seeds – 1 tsp
  • Turmeric powder – 1 tsp
  • Coconut – 2½ whole coconuts
  • Oil – 1–2 tbsp
  • Water – as required
  • Salt – to taste

Oven-Baked Oyster Rice is a delicious and flavorful seafood dish made with fresh oysters, aromatic spices, coconut, and parboiled rice. The oyster masala is combined with a smooth coconut rice batter, cooked until thick, and then baked until perfectly cooked with a lightly golden top.     Prepare the Oyster Masala:

    Clean the oysters thoroughly and drain them. Reserve the oyster water/liquor, strain it well, and keep it aside.

    Heat 6–7 tbsp oil in a heavy-bottomed pan.

    Add the sliced onions and sauté until light golden.

    Add the chopped green chilies and sauté for a minute.

    Add the chopped tomato and cook until soft.

    Add the ginger-garlic paste and sauté until the raw smell disappears.

    Add turmeric powder, salt, and garam masala. Mix well.

    Add the cleaned oysters and cook gently for a few minutes.

    Wash the parboiled rice thoroughly and soak it for 7–8 hours. Drain completely.

    In a blender, add the small onions, green chillies, cloves, cardamom, cinnamon, ginger-garlic paste, fennel seeds, turmeric powder, and a little water. Blend well.

    Add the blended mixture to the soaked rice. Add a little salt and mix well.

    Transfer the rice mixture to the blender in batches. Add coconut and a little water and blend until smooth.

    Continue blending the remaining rice with coconut and a little water until you get a smooth batter.

    Transfer the prepared batter to a large vessel.

    Add a little water to the blender, rinse out any remaining batter, and pour it into the vessel. Mix well.
