Ingredients

  • For Vada:
  • Urad dal – 1½ cups
  • Water – as required
  • Oil – for deep frying
  • For Soaking Vadas:
  • warm water– as required
  • Salt – to taste
  • Coriander leaves – a little
  • For Sweet Curd:
  • Thick curd – 2 cups
  • Sugar – 3 tbsp
  • Salt – a little
  • For Green Chutney:
  • Coriander leaves – 1 handful
  • Mint leaves – ½ handful
  • Green chilies – 3
  • Garlic cloves – 9
  • Cumin seeds – ½ tsp
  • Chaat masala – ½ tsp
  • Curd – 4–5 tbsp
  • Salt – to taste
  • For Topping:
  • Sweet date-tamarind chutney – as required
  • Red chili powder – as required
  • Chaat masala – as required

Dahi Vada is a delicious and refreshing Indian chaat made with soft, fluffy urad dal vadas soaked until tender and topped with creamy sweetened curd, fresh green chutney, sweet date-tamarind chutney, red chilli powder, and chaat masala. Perfect for parties, festivals, and special occasions.

Cooking Steps

    Wash 1½ cups urad dal thoroughly and soak it in water for several hours.

    Drain the soaked dal and transfer it to a grinder. Add a little water and grind into a smooth, thick batter.

    Transfer the batter to a bowl and beat it for 2–3 minutes until light and fluffy.

    To check the batter, drop a small amount into a bowl of water. If it floats, the batter is ready.

    Heat oil over medium heat. Shape small portions of batter into vadas and carefully drop them into the hot oil.

    Fry until the vadas turn golden brown and crisp. Remove and drain on a paper towel.

    In a vessel, add warm water, a little salt and fresh coriander leaves. Soak the fried vadas in this water until soft.

    Gently squeeze out the excess water from the vadas without breaking them.

    Arrange the soaked vadas in a serving dish.

    Whisk 2 cups curd, 3 tbsp sugar and a little salt until smooth and creamy. Pour the sweetened curd generously over the vadas.

    For the green chutney, grind 1 handful coriander leaves, ½ handful mint leaves, 3 green chillies, 9 garlic cloves, ½ tsp cumin seeds, ½ tsp chaat masala, 4–5 tbsp curd and salt until smooth.

    Drizzle the green chutney and sweet date-tamarind chutney over the vadas.

    Sprinkle chaat masala and red chili powder on top.

    Serve delicious, soft and creamy Dahi Vada.
