Frequently Asked Questions

Why rest the goli baje batter for an hour?

Resting lets the curd and baking soda work, so the batter puffs up and the goli baje turn soft and spongy inside.

How do I get round goli baje?

Dip your fingers in water, pick up a small amount of the thick batter and drop it gently into medium-hot oil. A thick batter keeps the round shape.
