  • For the Coconut Filling:

  • 1½ cups sugar
  • 4 cardamom pods
  • 2 teaspoons sesame seeds
  • For the Dough:
  • ¾ cup shredded coconut
  • A little water, as needed
  • 3 eggs
  • ¼ teaspoon salt
  • 1 cup rice flour
  • 2 cups all-purpose flour (Maida)
  • Oil, for deep frying

Crispy Coconut Gujiya is a delicious homemade sweet with a crunchy golden outer layer and a flavorful coconut filling. The filling is prepared with shredded coconut, sugar, cardamom, and sesame seeds, while the dough is made with rice flour, maida, eggs, and fresh coconut milk. The gujiyas are shaped in a mould and deep-fried on medium flame until perfectly golden and crispy. Perfect for festivals, Eid, Ramadan, family gatherings, and special occasions.

    Prepare the Coconut Filling:

    Heat a kadai over medium flame.

    Add 3 cups shredded coconut, 1½ cups sugar, and 4 cardamom pods.

    Mix well and cook for a few minutes.

    Add 2 teaspoons sesame seeds and mix thoroughly.

    Cook for another 2–3 minutes, then turn off the flame.

    Keep the filling aside to cool.

    Prepare the Coconut Milk:

    Add ¾ cup shredded coconut to a blender.

    Add a little water and blend well.

    Strain the blended coconut mixture into two separate bowls.

    Keep the first strained coconut milk for preparing the dough.

    Keep the second strained coconut water/milk separately. It is optional and can be used only if the dough needs extra moisture.

    Take the first coconut milk in a mixing bowl.

    Add 1 cup rice flour and 2 cups Maida.
