  • 3 potatoes
  • 1/2 cup cauliflower (chopped)
  • 1 carrot (chopped)
  • 1 cup water
  • 1 tbsp oil
  • 2 tbsp butter
  • 1 green Chilli (chopped)
  • 1½ tbsp ginger-garlic paste
  • 2 onions (finely chopped)
  • 2½ tomatoes (finely chopped)
  • 1 capsicum (finely chopped)
  • Salt (as per taste)
  • 1/2 tsp turmeric powder
  • 1 tsp Kashmiri red Chilli powder
  • 2 tbsp pav bhaji masala
  • 1/2 lemon juice
  • Fresh coriander leaves
  • Pav buns
  • Extra butter for toasting

Cooking Steps

    Add potatoes, cauliflower, carrot, and 1 cup water to a cooker. Pressure cooks for 5 whistles.

    Mash everything well and keep aside.

    Heat oil and butter in a pan.

    Add green Chilli and ginger-garlic paste. Sauté for a minute.

    Add onions and cook until soft.

    Add tomatoes and capsicum. Cook well until soft.

    Add salt, turmeric powder, Kashmiri red Chilli powder, and pav bhaji masala. Mix well.

    Add the mashed vegetables and mix properly.

    Add lemon juice and fresh coriander leaves. Mix well and switch off the flame.

    Heat butter in a pan, add a little pav bhaji masala, place the pav on the pan and toast well until coated with the masala. Serve hot. 😋
