- 21Bring the water to a boil.
- 22Add the fish and cook gently until it is partially cooked.

- 24Reserve the remaining fish stock for the biryani masala.
- 25Step 4: Combine the Fish and Masala
- 26Add the reserved fish stock to the prepared masala.
- 27Mix well and cook until the masala thickens slightly.
- 28Gently place the partially cooked fish pieces into the masala.
- 29Coat the fish lightly with the masala, taking care not to break the pieces.
- 30Step 5: Layer the Biryani
- 31Place a plate over the fish masala.
- 32Add the first layer of cooked rice over the plate.
- 33Top with tomato slices, fresh coriander leaves and fried onions (birista).
- 34Add the second layer of cooked rice.
- 35Again, add tomato slices, coriander leaves and birista.
- 36Drizzle ghee over the rice.
- 37Add a little yellow food color to both rice layers, as desired, and drizzle some more ghee over each layer.
- 38Step 6: Cook on Dum
- 39Cover the pot tightly with a lid.
- 40Cook on low flame until the rice is completely cooked and the flavors combine.
- 41Turn off the heat and allow the biryani to rest for a few minutes.
- 42Gently fluff the rice without breaking the fish pieces.
- 43Step 7: Serve
- 44Serve the hot Fish Biryani with fish fry, green chutney and cucumber-onion curd salad.
- 45Enjoy your delicious homemade Fish Biryani!
Frequently Asked Questions
Which fish is best for fish biryani?
Firm fish such as kingfish (surmai), seer fish or salmon hold their shape during dum cooking. Avoid soft fish that breaks easily.
How do I keep the fish pieces from breaking?
Cook the fish only partly before layering, handle it gently and avoid stirring once the rice is on top. Dum cooking finishes it.
