Frequently Asked Questions

Why cook the grated lauki in ghee first?

Cooking it in ghee removes its raw smell and excess water, so the kheer is rich and creamy rather than watery.

Why does lauki kheer need so much milk?

The milk slowly reduces with the rice, sabu dana and lauki, which makes the kheer thick and creamy. Stir often so it doesn't stick to the pan.
