Ingredients

  • Cashew nuts – 2 cups

  • Milk powder – 2 tablespoons
  • Ghee – 1 tablespoon + 1 teaspoon

Kaju Katli is a delicious, soft and melt-in-the-mouth Indian sweet made with finely ground cashews, sugar, milk powder and cardamom. The mixture is cooked until thick, kneaded with ghee, rolled between butter paper, cut into diamond-shaped pieces and decorated with silver varq. Perfect for festivals, celebrations and gifting. ✨💎

Cooking Steps

    Step 1 – Prepare Cashew Powder: Add 2 cups cashew nuts to a blender and blend them into a fine powder. Then sieve the cashew powder through a strainer to remove any coarse pieces.

    Step 2 – Prepare Sugar Syrup: In a pan, add 1¼ cups sugar and ½ cup water. Mix well and cook until the sugar dissolves completely.

    Step 3 – Add Elaichi: Add ¼ teaspoon cardamom powder and mix well.

    Step 4 – Add Cashew & Milk Powder: Add 2 tablespoons milk powder to the sieved cashew powder and mix well. Gradually add this cashew mixture to the sugar syrup, little by little, while continuously mixing to avoid lumps.

    Step 5 – Add Ghee: Add 1 tablespoon ghee and mix continuously until everything is well combined and the mixture becomes thick.

    Step 6 – Turn Off the Flame: Once the mixture becomes thick and starts coming together, turn off the flame.

    step 7 – Knead the Mixture: Transfer the hot mixture onto butter paper. Carefully mix and knead it until it becomes smooth. Add 1 teaspoon ghee and knead again until the mixture becomes soft and smooth.

    Step 8 – Roll & Cut: Place another sheet of butter paper over the mixture. Roll it evenly using a rolling pin to your desired thickness. Remove the top butter paper and cut the Kaju Katli into diamond-shaped pieces.
