Cooking Steps
- 1Prepare the Mixture: Heat 2 tbsp ghee in a pan. Add ¾ cup milk and mix well. Once it comes to a boil, reduce the flame to low.
- 2Add Milk Powder: Gradually add 2 cups milk powder, stirring continuously to prevent lumps.
- 3Cook Until Thick: Keep stirring on low flame until the mixture becomes thick and starts leaving the sides of the pan.
- 4Add Cardamom: Add ½ tsp cardamom powder and mix well.
- 5Add Sugar & Ghee: Transfer the mixture to a plate. Add a little ghee and mix well. Add ¼ cup powdered sugar and mix thoroughly. Then add 1 tsp ghee and mix again until smooth.
- 6Add Colours: Divide the mixture into 3 equal portions. Add red, orange, and green food colours to each portion and knead gently until evenly colored.
- 7Make Burfi Using Silicone Mould: Take small portions of the coloured mixture, place them into a silicone mould, press gently, and carefully remove.
- 8Make the Rolled Burfi: Place the red-coloured mixture on butter paper and roll it into a thin layer.
- 9Similarly, roll the green mixture into a thin layer and place it over the red layer. Finally, prepare the orange layer and place it over the other layers.
- 10Roll: Trim the edges evenly. Using the butter paper, carefully roll all three layers together into a tight log.
- 11Cut & Serve: Cut the roll into small pieces and gently shape them as needed.

Frequently Asked Questions
Why does my burfi mixture turn lumpy?
Add the milk powder gradually to the warm milk and ghee on low flame, stirring all the time. Adding it all at once makes lumps.
How do I know the mixture is ready to shape?
It is ready when it turns thick, leaves the sides of the pan and forms a soft dough. Let it cool slightly before kneading in the colours.
