Cooking Steps
- 1Soak the Tamarind: Soak 1½ cups tamarind in warm water for 20–30 minutes.
- 2Blend: Add the soaked tamarind, 1½ cups seedless dates, and 2½ cups water to a blender. Blend until smooth.
- 3Strain: Strain the blended mixture through a fine sieve to extract a smooth pulp. Add a little water if needed to adjust the consistency.
- 4Cook: Transfer the tamarind-date pulp to a pan and add 1 cup jaggery. Add more jaggery according to your taste.
- 5Simmer: Cook on medium-low heat, stirring occasionally, until the jaggery dissolves and the chutney reaches your desired consistency.
- 6Season: Add ¼ tsp salt, ½ tsp Kashmiri red chilli powder, and ¼ tsp dry ginger powder. Mix well.
- 7Cook for another 2–3 minutes, stirring continuously, until everything is well combined.
- 8Cool: Allow the chutney to cool completely. Strain again if you prefer an extra-smooth chutney.
- 9Store: Transfer to a clean, airtight container and store in the refrigerator.
