  • Water – 2½ cups
  • Red Chilli Powder – ½ tsp
  • Salt – ¼ tsp
  • Dry Ginger Powder (Sonth) – ¼ tsp

A delicious homemade Tamarind Dates Chutney (Imli Khajoor Chutney) made with tangy tamarind, naturally sweet dates and jaggery, with a mild kick of Kashmiri red chilli and ginger. This smooth, sweet-and-tangy chutney is perfect for samosa, pani puri, bhel puri, dahi vada and other chaat recipes. 😋🌴

Cooking Steps

    Soak the Tamarind: Soak 1½ cups tamarind in warm water for 20–30 minutes.

    Blend: Add the soaked tamarind, 1½ cups seedless dates, and 2½ cups water to a blender. Blend until smooth.

    Strain: Strain the blended mixture through a fine sieve to extract a smooth pulp. Add a little water if needed to adjust the consistency.

    Cook: Transfer the tamarind-date pulp to a pan and add 1 cup jaggery. Add more jaggery according to your taste.

    Simmer: Cook on medium-low heat, stirring occasionally, until the jaggery dissolves and the chutney reaches your desired consistency.

    Season: Add ¼ tsp salt, ½ tsp Kashmiri red chilli powder, and ¼ tsp dry ginger powder. Mix well.

    Cook for another 2–3 minutes, stirring continuously, until everything is well combined.

    Cool: Allow the chutney to cool completely. Strain again if you prefer an extra-smooth chutney.

    Store: Transfer to a clean, airtight container and store in the refrigerator.
