Frequently Asked Questions
Why make your own mandi masala?
Freshly roasted and ground whole spices give mandi its strong, smoky aroma. Store-bought masala works, but the flavour is milder.
How do I get the smoky flavour in chicken mandi?
Place a red-hot piece of charcoal in a small bowl on top of the rice, pour a few drops of oil or ghee over it and cover tightly for 2 to 3 minutes.
