Frequently Asked Questions

Why add cooking soda to the besan batter?

A small amount makes the coating light and crispy. Too much gives a bitter taste, so stick to the measured amount.

How thick should the besan batter be?

Thick enough to coat the omelette strips without dripping off, like pakora batter. If it is too thin, the coating slides off in the oil.
